Corn, Bacon, Tomato and Basil Pizza
Corn! It’s here. Piles upon piles of ears have started cropping up in our market, and for some reason, I’m in a corny mood this year.
This was our Friday Night Pizza last week. After picking up a few ears of corn at our Tuesday market, the rest of the ingredients came together from our CSA shares — fresh tomato and basil from our vegetable share and bacon ends from our Piggery share.
I always knew I loved sweet corn paired with basil (have you ever tried Ina’s Fresh Corn Salad??) but upon biting into this pizza, I puzzled over why I hadn’t paired it with bacon before. Because, I must confess, I devoured almost half the pizza in just a few minutes. The sweetness of the corn against the saltiness of the bacon was perfect…and punctuated by the mild acidity of the tomatoes and the tang of fresh goat cheese, it was heavenly!

Corn, Bacon, Tomato and Basil Pizza
Ingredients
1 lb pizza dough (my recipe or your favorite)
1 large or 2 small ripe tomatoes, sliced
1 ear corn, kernels sliced off
leaves from 1 stem of basil, roughly chopped
about 2 strips of bacon, cooked until brown and then broken into small pieces
2 oz goat cheese, crumbled
4 oz Monterey Jack cheese
Directions
Preheat your oven to 500 degrees, preferably with a baking stone on the bottom rack.
Stretch out your dough on a piece of lightly floured parchment. Layer the toppings as follows: Jack cheese, basil, tomato slices, bacon, corn, and end with the crumbled goat cheese.
Bake until crust is brown and cheese is melted and bubbly. Devour.

This looks absolutely gorgeous. I’ve had so many tomatoes on hand from my container gardening and love picking up corn because it’s flavorful and cheap so I may have to try this out.

Hey Amy, Can’t wait to get a taste of pizza out of that oven of yours – this one looks awesome! In Portsmouth last week, Jay and I had an awesome combo that I thought you might want to try: basil pesto, onion, prosciutto, pine nuts, tomato (was it sundried??) and while I didn’t think it added anything, there wouldn’t have been enough meat for Jay without the chicken.
I love your idea to put corn on pizza… I stocked up on fresh corn at a local farmer’s market yesterday and had no plans for it… I might have to give this a try!
just made it this recipe last night. everyone loved it (even my 5yr old and 2yr old!). I actually made the pizza on the grill and it was perfect! thanks for the great idea. the corn and bacon = yum!

This was divine. Made it at a friend’s house who was having a “build your own pizza” night and we got to bake it up in their wood-fire oven in the backyard. This recipe was the hit of the party! Yum!
Hey (many compliments from people at RSD discovering your website recently)…anyhow, just had a thin crust pizza made to order the other day and had to suggest it to you: Dried figs, spinach, pesto, roasted tomatoes, Parmesan cheese, goat cheese and balsamic glaze…try it and tell me ya love it as much as I did!
