Vanilla Yogurt Panna Cotta, and a Giveaway

I’ve mentioned before that I’m a big fan of Greek yogurt. We were going through containers of Fage yogurt at an alarming rate, so much so that I said to myself “stop the madness!” and began making my own yogurt. Which, to date, has been a very satisfying and delicious endeavor, but sometimes I do miss the thick, stand-a-spoon-in-it creaminess and texture of Greek yogurt.

But, happy days, someone from Stonyfield Farm contacted me the other day to ask if I’d be interested in sampling some of their new organic Greek yogurt, called Oikos. Of course! And it’s really very good: deliciously creamy, thick, and it comes in two sizes — 16 oz tubs of the plain variety (which is what I always buy) and smaller individual cups with fruit or honey on the bottom. And as much as I love the creaminess and texture, the fact that it’s made with organic milk just gilds the lily.

In addition to eating the yogurt with fruit and granola, blending it into a dip with spinach and garlic, and making fruit smoothies, I also took advantage of the yogurt’s creamy thickness to use in a vanilla panna cotta. Panna cottas are unbelievably easy to make (David Lebovitz just had a nice primer on how to make the perfect panna cotta) and lusciously light on the tongue…I like to make them year round, serving them with seasonal fruit. Since berries won’t be in season here until May or June (arrrrgh! it can’t come soon enough!), I decided to make a honeyed pomegranate syrup to spoon over the panna cottas. The sauce is tangy, a little sweet, and a great foil for the vanilla-bean infused panna cotta.

Vanilla Yogurt Panna Cotta

Adapted from Food and Wine

Ingredients
1 envelope unflavored gelatin (2 1/4 teaspoons)
2 tablespoons cold water
1 cup heavy cream
1/3 cup sugar
1 vanilla bean, split, seeds scraped
One 16-ounce tub of Greek yogurt

Directions
Place cold water in a small bowl and sprinkle the gelatin over; let it stand until softened for about 5 minutes.

In a small saucepan, bring the cream, sugar, and vanilla bean and seeds to a simmer. Turn off the heat and stir in the gelatin; keep stirring until the gelatin is fully melted.

Whisk the yogurt in a large bowl until smooth, then gradually whisk in the vanilla cream. Divide the mixture among six 1/2 cup ramekins. Refrigerate for at least 3 hours, until set.

To serve, run a knife around the inside of each ramekin. Set a plate on each ramekin and invert each panna cotta onto a plate; you may have to tap and shake the ramekins to loosen the panna cottas.

Makes 6 panna cottas.

Honeyed Pomegranate Syrup

Ingredients
16 ounces pomegranate juice, such as POM Wonderful
2 tablespoons honey

Directions

Combine pomegranate juice and honey in a saucepan. Bring to a boil and continue simmering over medium high heat until the mixture has reduced and thickened slightly into a syrup. Cool and refrigerate in an airtight container.

    I only recently discovered the joy that is Greek yogurt. Mixed with honey as a snack or whisked with lemon juice, salt, and pepper as a dressing are my two favorite ways to eat it.

    i have an on-going love affair with plain greek yogurt 😉 it is perfect on top of my oatmeal in the morning! last summer i made honeyed frozen yogurt with it before, and it was delicious. i’ve also been known to mix it with salsa and dip tortilla chips in it! yum.

    The first time I tried Greek yogurt was in Greece. I had it with honey and a crusty baguette and it was heaven! I plan to try this recipe, it looks great.

    I haven’t thought to try to make panna cotta with greek yogurt. I love Fage and the TJs brand. It is GREAT with granola. YUM. I can’t go back to normal yogurt now.

    I *love* Greek yogurt—Fage is the brand I see most often (and it’s wonderful, but expensive). Walmart carried Oikos briefly, but I haven’t seen it in months. One favorite way to enjoy Greek yogurt (there are so many) is with passionfruit syrup.

    I LOVE greek Yogurt layered in a bowl with fruit salad. Apples, Strawberries, Grapes, peaches, melon, and a big handful of whole walnuts. drizzle it with a hearty helping of honey and I could just die!

    I love greek yogurt not only for the taste but because it contains a lot of protein which fills me up so I don’t have a huge breakfast (it’s my favorite meal). Usually it also has fewer calories (read sugar) than other yogurts so it’s a double whammy. I like it with bananas or just straight (no chaser).

    I’m a Greek yogurt addict!! It was love from the first time I ever had it. My favorite is the Fage 2% Greek yogurt and I like to eat it plain or sometimes with some honey. 🙂 Yumm … haven’t seen the Oikos around yet but will have to look out for it as I do try to eat only organic dairy. Thanks!

    I tried Greek yogurt for the first time a couple months ago. It is so amazing–and versatile! I like eating it with fresh fruit and a little honey for sweetness. I really want to try making some frozen yogurt with it.

    Oikos was my first foray into Greek yogurt – I love it! I’ll eat it plain, no question about that. I’ve tried Fage but for me, it just doesn’t compare to Oikos. Three cheers for Stonyfield!

    I’ve never tried Greek yogurt — but I want to!! My favorite yogurt brand is Tilamook, because it actually tastes like yogurt and not flavored milk (coughYouplaitCOUGH)!

    Oooh. I love Greek yogurt. I have skinny kids. Kids who, despite eating like they each have two hollow legs, have trouble even hitting the weight portion of the curve on their growth charts. So I take the highest fat Greek Yogurt I can find and mix it with dried herbs and spices to make a killer Dill Dip. They eat through the dip like water. It makes my Mommy heart very happy. And normally I get Fage, but that’s just because that’s all I can find around here.

    I’m a big fan of the Oikos with the honey on the bottom. It’s a nice sweet, but refreshing end to a meal. Especially nice when I have a hectic day at work and take a real lunch break to keep me sane.

    I’ve only had Greek yoghurt once. I used it to make tzatziki sauce for some gyros burgers one day. But I used some non-fat Greek yoghurt because it was the only plain one at the store in a small container. The fat free kind apparently isn’t as thick.

    I absolutely adore Greek yogurt! I first tried it in London at a Middle Eastern restaurant slightly sweetened with honey and topped with pistachios and chopped dried apricots. That’s still my favorite way to eat it, though I’m not above savoring it plain straight out of the package. 😉 I love Fage, but I haven’t yet tried Oikos. I’ll keep my eyes open for it. I like that it’s organic.

    I actually originally found your site searching for recipes to make your own yogurt. I haven’t had a chance yet, but it got me started eating plain with a bit of honey from my dad’s hives. It is the bees knees. Sorry, what a terrible joke. Anyway, everyone always says Greek yogurt is the way to go, but I’ve never tried that either.     I discovered Greek Yogurt when I was living in Vermont in 2007 — and went through those little containers of Fage at warp speed. I like to buy the plain kind, and add my own very small drizzle of local honey. Honeyed Pomegranate Syrup looks like it would definitely do the trick too, though!

    Interesting coincidence that you would bring up Greek yogurt, as I just discovered this last week and I am definately hooked!

    Previously, I opted for organic varieties that I thought were good products, but I have a new appreciation yogurt after trying some Fage – such thick and creamy good quality Greek yogurt!(I would like to try the Stoneyfield to see if it measures up)

    I have a new way of eating yogurt as well. I love it with a nice layer of honey on top.

    I used to make yogurt when I had friends who kept goats. Goat milk makes a wonderful, silken yogurt. I probably ought to get out the big thermos, and start it up again. I need to make your panna cotta RSN. Thanks.

    I love Greek yogurt everyway. Plain, sweetened and for cooking both sweet and savory things. The panna-cotta is beautiful. You can easily approximate the consistency of greek-style yogurt with your home-made yogurt by straining the whey out of it: line a strainer or collander with cheese cloth, pour in the yogurt and allow to drain overnight in the refrigerator. yum.

    I love greek yogurt. I usually chop up a few frozen cherries in the morning and stir them, along with just a dash of vanilla, into my greek yogurt. Then I let it sit in the fridge until my afternoon snack time. By the time I eat it, the cherries have thawed and released lots of yummy juice into the yogurt. I stir it up and have thick, creamy, cherry vanilla yogurt for my snack. Awesome.

    I LOVE Greek yogurt. The Trader Joe’s version is so rich & creamy you’d never know it was nonfat if you didn’t see the package. Usually I just drizzle some honey over the top and eat it straight — tangy with a little sweet.

    I use pomegranate syrup, but never tried sweetened (duh).
    Yum Greek yogurt w/honey. Oikos was just introduced at one od my grocery stores, I hope it catches on because I heart Stonyfield!
    my favorite yogurt memory is Mom’s homemade w/granulated sugar a regular dessert treat!

    I love greek yogurt and was on cloud 9 when my local store started carrying it vs buying unflavored regular yogurt and then using a cheesecloth (which is also hard to find at a grocery store, i dont know why, i even asked) overnight to get the excess water out. messy! any who, i love it as tsaziki sauce the best. i could eat that stuff on anything, even bread. chopped cucumber, dill, extra garlic and lemon juice. heaven!!! now i’m craving it.

    I love yogurt in just about any conceivable way, but all those ways are soooo much better with Greek yogurt. One thing I really like is that it can be used in hot dishes instead of sour cream and it doesn’t curdle as readily.

    I first had Greek yogurt in Turkey several years ago: drizzled with honey as dessert. I am going to use your recipe for homemade yogurt and then try the Panna Cotta. I love Panna Cotta.

    Have you ever tried Lebni? It is sometimes called Mediterranean Yogurt or Kefir Cheese. It is completely different than yogurt, but related. It also has live cultures.

    Amy– I love Greek yogurt. And actually, did you know you can use the yogurt you are already making and make Greek yogurt? Just place it in a cheesecloth lined strainer for a few hours in the refrigerator until the excess water from the regular water drains out.
    My favorite way to eat Greek yogurt is with honey drizzled on top, fresh seasonal fruit, and my homemade granola. It is undescribably delicious!

    I love Greek yogurt too and am completely addicted to Ana Sortun’s beet tzatiki from her restaurant Oleana and cafe Sofra in Cambridge, MA. Here’s the recipe from the NY Times a few years ago: http://www.nytimes.com/2006/06/21/dining/213crex.html?_r=1

    Buying it from the cafe is an expensive habit, so I’m going to make a vat of it myself soon. At Sofra, they serve it as an option on their mezze platter with a Turkish-style focaccia, sprinkled with coarse salt, poppy seeds and lemon zest. Yum.

    I love yogurt and granola. But my favorite way to use Greek Yogurt would be fast, homemade salad dressing– fresh minced garlic, lemon juice, chives and a little crumbled blue cheese. When I buy he nonfat version, I save a ton of calories and it’s delicious.

    I absolutely love Greek yogurt, but I usually bypass it as I cannot afford it on a daily basis. The budget of a college student without a job usually can’t accept these goodies. I plan on making my own yogurt then straining it for a couple hours afterwards in order to get that thick consistency. At least, I will once I have a non-dingy apartment kitchen. ^^; I don’t trust that place.

    I make a feta cheese spread with Greek yogurt, feta, lemon juice, garlic, & herbs. It’s great for crackers with olives, as a sandwich spread with cucumbers or chicken on pita, or even as a chip dip when thinned out a bit.

    I’ll never forget trying Greek for the first time in Greece– was this the same food as the runny pink stuff I ate in the States? I ordered it everywhere I went. Most recently, we like to use it to make our own raita, with cucumbers, tomatoes, and chiles from the garden.

    Frozen yogurt made with Greek yogurt is divine, but my favorite way to eat it is just plain with lots of honey.

    I love it as traditional cucumber sauce, but I make my own pita, and grill a pork loin with mint. I love it:)

    I just made this recipe last night on a whim after seeing your gorgeous photos. It turned out so well! I am thrilled to find a panna cotta recipe that essentially has only 25% of the calories. I have always held a special place in my heart for the dessert but with 4 cups of heavy cream included, I didnt make it very often. You can bet I will make versions of this one from now on!
    Oh, and sign me up for the free greek yogurt.

    My family & I are also yogurt aficionados, however we haven’t ventured into the make-your-own or panna cotta territory yet. Thou I swear the panna cotta speaks faintly to me, “try me, try me.”

    Love greek yogurt, with the classic honey and almonds – yum! Unfortunately, it’s hard to find in my town. Do I get bonus points for having a carton of regular Stoneyfield Farm plain yogurt in my fridge? 🙂

    I would love to try the Greek yogurt. I have been a big fan of Stonyfield Farm and get the plain low fat large container. I usually have it with just a little honey and chopped almonds and whatever fresh fruit I have to put on top. It is the only yogurt I will eat because it does not have all the artificial stuff that other brands use. It’s the best.

    My favorite way to eat greek yogurt? With fresh blueberries and banana DaVinci syrup, Kashi Honey Sunshine cereal and a couple chopped walnuts– instant banana bread!

    Also as an ingredient on the world’s simplest high-protein pancakes— 1/4 c. greek yogurt, 1/4 cup egg beaters, 2 tbsp wheat flour, and a shake of cinnamon/Splenda.

    Your panna cotta look delicious!

    I love thick tangy Greek yogurt with honey, lemon and vanilla. Or topped with brandied cherries. On crackers, sprinkled with smoked salt and cracked pepper. A dollop on thick bean soup with ham. On top of Cuban black beans and rice.

    I’ve never tried Greek yogurt. I have had Trader Joe’s European style yogurt. It was kind of runny but had a nice tanginess. I’ve always wanted to try Greek yogurt for the thickness, but it’s so expensive!
